Chicken Mignon Wrapped In Bacon With Garlic Butter And Pesto
These Chicken Mignons are delicious, succulent and so tasty! They are filled with garlic herb butter and pesto and are an awesome dinner option!
They are easy to make up.
On the inside of the flatten chicken breast,fill it up with a tablespoon of pesto and add a knob of garlic herb butter on top.
It is possible to make your own garlic butter by simply mixing the crushed garlic into soften butter, and wrapping it in plastic food wrap. Then place it into into the fridge to set. Or you could just use some Kerrygold garlic and herb butter to save time.
Roll up the chicken breast and place a long piece of bacon rasher around it, and fasten it together with a tooth pick. Make sure you leave enough of the toothpick out, so that people can see them
In an oven baking dish, lay down some baking paper (makes it so much easier to clean the baking dish later) and place in the chicken mignons. Place a knob of butter on top of each on. I place it on the tooth pick to keep it on the top.
Bake in a pre-heated hot oven (180ºC or 350F), till the bacon on the top is crispy and golden brown and the chicken is cooked through. This will totally depend on the size of your chicken mignon fillets and on how many you decide to bake
We serve them with a fresh salad and crispy smashed baked potatoes!
- 5 chicken breast fillets
- 5 long rashers of smokey bacon rashers
- 2 teaspoons of crushed garlic
- 1 tablespoon of pesto (we use Classico traditional basil pesto)
- 100g garlic and herb butter – chopped
- 2 teaspoons of mustard (optional)
