Gorgeous Cheesecake Carrot Cake

I love cake, and carrot cake always seems to be a bit of a tradition in our family, although this one is also combined with cheesecake too!
The texture consists of two cakes. It’s super yummy, and is fast becoming one of our favorites
Ideal for party functions, and small gatherings it just LOOKS gorgeous!
The best part about this cake is that it has a number of scrumptious layers of carrot cake, a superb and creamy cheesecake center, and on top, is a fabulous cream cheese frosting. Truly delicious!
Don’t be put off by the fact that this involves a number of layers. It is quite easy to put it altogether, and it is not as hard as you might think!
Here are the ingredients that you will need to have, I have divided them up into 3 categories.

The 1st category is for the carrot cake layer.

  • 2 cups of granulated sugar
  • 1 cup of canola oil
  • 4 medium to large eggs
  • 2 cups of all-purpose flour
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • 1/4 tsp of kosher salt
  • 2 tsp of ground cinnamon
  • 2 cups of shredded carrots

The 2nd category here are the ingredients for the cheesecake layer

  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup of granulated sugar
  • 1/4 tsp of kosher salt
  • 2 medium to large eggs
  • 1/4 cup of sour cream
  • 1/3 cup of heavy whipping cream

Our 3rd category here are the ingredients for the frosting

  • 1 cup of butter, this should be unsalted and softened
  • 1 package (8 oz) cream cheese, softened
  • 1 tsp of vanilla extract
  • 1/4 cup of heavy cream
  • 4 cups of powdered sugar
  • 1 cup of chopped pecans
 And that’s all the ingredients we need!
 For the cream cheese I tend to use PHILADELPHIA cream cheese, because it works perfectly every time.
